Almost like Nan makes

Growing up I loved nothing more than every couple of weeks going to nans and coming home with a icecream container full of orange cakes for myself and sisters, a container of chocolate with coconut sprinkled on top of choc icing for dad, and paperbag full of sultana biscuits for mum.

Up until a couple of years ago, when Nan wasnt able to do it anymore, this was something I absolutely treasured and hung out for. Since Nan passed away in November all I have thought about is darn orange cakes!! I tried to get the recipe, but it appears it is the one page missing out of Nan's hand written recipe book :(

Yesterday I decided that I was going to give it a crack and make my own up and try to get somewhere near nans recipe. So I used Di's foolproof vanilla cupcake recipe and made slight adjustments. I added the recipe below;

(oops just realised I only ever use 1 egg in it, seems to be just a delicious though!!)

Finely grate the zest of 1 orange and set aside.
Take a 1 cup measure and crack 2 eggs into it,
add the juice from the orange.
Fill to the top with cream, tip into a bowl and beat together for 1 minute.
Add 3/4 cup caster sugar and beat for another 3 minutes.
Add 1 cup of SR flour and zest and mix until well combined. Spoon into cases and bake in moderate oven (160C Fan forced) for 15-20 minutes.

deeeeeelish, and tasted almost spot on with nans. Now if I could just get the icing right all would be good in the world!
